Classic Jerk Chicken

Ingredients:

2 lbs chicken thighs, bone-in and skin-on
1/4 cup jerk seasoning
2 tbsp olive oil
2 cloves garlic, minced
1 onion, finely chopped
1 scotch bonnet pepper, seeded and chopped
1 tbsp brown sugar
Salt and pepper to taste

Steps:

In a large bowl, mix together jerk seasoning, olive oil, garlic, onion, scotch bonnet pepper, brown sugar, salt, and pepper.
Add chicken thighs to the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
Preheat grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes per side, or until chicken is cooked through.
Serve hot and enjoy the classic flavors of jerk chicken!

Citrus Jerk Chicken Tacos

Ingredients:

2 lbs chicken breast, thinly sliced
1/4 cup jerk seasoning
Juice of 1 lime
Juice of 1 orange
2 tbsp olive oil
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 onion, thinly sliced
8 small flour tortillas
Optional toppings: avocado, salsa, cilantro

Steps:

In a large bowl, mix together jerk seasoning, lime juice, orange juice, and olive oil. Add chicken and marinate for 30 minutes.
In a skillet, stir-fry bell peppers and onions until they are tender. Remove from skillet and set aside.
In the same skillet, cook marinated chicken until fully cooked, about 6-7 minutes.
Warm tortillas in a separate skillet. Fill each tortilla with chicken, bell peppers, onions, and your choice of toppings.
Roll up the tacos, serve hot, and enjoy the zesty flavors of citrus jerk chicken!
