How to Make Gizdodo
Ingredients:
– 2 cups of chopped gizzard
– 2 cups of chopped plantains
– 1 onion, diced
– 1 bell pepper, diced
– 1 can of diced tomatoes
– 1/2 cup of tomato sauce
– 1/4 cup of vegetable oil
– 1 teaspoon of thyme
– 1 teaspoon of curry powder
– 1 teaspoon of garlic powder
– Salt and pepper to taste
– Chopped scotch bonnet pepper (optional)
– Chopped green onions for garnish
Steps:
1. In a large skillet, heat the vegetable oil over medium heat.
2. Add the diced onions and bell pepper and sauté until softened.
3. Add the chopped gizzard and cook until browned.
4. Stir in the diced tomatoes, tomato sauce, thyme, curry powder, garlic powder, salt, and pepper.
5. Cover and let it simmer for about 10 minutes until the gizzard is tender.
6. Add the chopped plantains and stir to combine.
7. Cover and let it cook for another 5-7 minutes, until the plantains are soft.
8. If using, add the chopped scotch bonnet pepper for some heat.
9. Taste and adjust seasoning if needed.
10. Garnish with chopped green onions before serving.
