Classic Chilli Crab Recipe

Ingredients:

– 2 whole mud crabs
– 1 onion, chopped
– 5 cloves of garlic, minced
– 1-inch piece of ginger, grated
– 2 red chillies, sliced
– 1 tablespoon tomato paste
– 1 tablespoon soy sauce
– 1 tablespoon sugar
– 1/2 cup chicken stock
– Spring onions, chopped for garnish

Steps:

1. Clean and cut the mud crabs into pieces.
2. In a wok, heat some oil and sauté the onions, garlic, ginger, and chillies until fragrant.
3. Add the tomato paste, soy sauce, and sugar, and stir well.
4. Pour in the chicken stock and bring to a simmer.
5. Add the crab pieces to the wok and cook until they turn red and the sauce thickens.
6. Garnish with chopped spring onions before serving.

– 1 onion, chopped
– 5 cloves of garlic, minced
– 2 red chillies, sliced
– 1 tablespoon curry leaves
– 1 tablespoon chilli powder
– 1 tablespoon sugar
– 1/2 cup coconut milk
– Spring onions, chopped for garnish

Steps:

1. Clean and cut the mud crabs into pieces.
2. In a wok, heat some oil and sauté the onions, garlic, chillies, and curry leaves until fragrant.
3. Add the mashed salted egg yolks and chilli powder, and stir well.
4. Stir in the coconut milk and sugar, and bring to a simmer.
5. Add the crab pieces to the wok and cook until they turn red and the sauce thickens.
6. Garnish with chopped spring onions before serving.
