Classic Nigerian Pancake

Ingredients:

2 cups all-purpose flour
1/2 cup sugar
1 tsp baking powder
1/2 tsp salt
2 eggs
1 1/2 cups milk
1/4 cup melted butter
1 tsp vanilla extract

Instructions:

In a large bowl, mix together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Heat a non-stick skillet over medium heat and pour in 1/4 cup of batter for each pancake.
Cook for 2-3 minutes on each side, or until golden brown.
Serve hot with your favorite topping.

Plantain-Stuffed Nigerian Pancake

Ingredients:

2 ripe plantains, mashed
1 batch of classic Nigerian pancake batter
1/2 cup chopped nuts (optional)
1/4 cup honey or syrup

Instructions:

Mix the mashed plantains and chopped nuts into the pancake batter.
Cook as usual on a non-stick skillet, but make sure to spread the batter thinly.
Drizzle honey or syrup over the pancakes before serving.

Coconut-Flavored Nigerian Pancake

Ingredients:

1 cup coconut milk
1/2 cup shredded coconut
1 batch of classic Nigerian pancake batter
1/4 cup sugar
1/4 cup melted butter

Instructions:

Replace the regular milk in the pancake batter with coconut milk.
Stir in shredded coconut, sugar, and melted butter.
Cook as usual on a non-stick skillet.
Serve with a sprinkle of shredded coconut on top.
