Classic Minestrone Bean Soup

Ingredients:

1 cup dried mixed beans
1 onion, diced
2 carrots, diced
2 stalks celery, diced
1 can diced tomatoes
4 cups vegetable broth
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste

Instructions:

Rinse the beans and place them in the Instant Pot.
Add in the diced onion, carrots, celery, tomatoes, vegetable broth, garlic, oregano, and basil.
Close the lid and set the Instant Pot to high pressure for 30 minutes.
Once the timer goes off, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
Season with salt and pepper to taste before serving.

Spicy Black Bean and Sweet Potato Soup

Ingredients:

1 cup dried black beans
1 sweet potato, diced
1 onion, diced
2 cloves garlic, minced
1 can diced tomatoes with green chilies
4 cups vegetable broth
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste

Instructions:

Place the black beans, sweet potato, onion, garlic, tomatoes, vegetable broth, cumin, and chili powder in the Instant Pot.
Cover and cook on high pressure for 25 minutes.
Naturally release the pressure for 10 minutes, then manually release any remaining pressure.
Season with salt and pepper before serving.
