Classic Arancini Recipe
Ingredients:
– 2 cups cooked Arborio rice
– 1/2 cup grated Parmesan cheese
– 1/4 cup chopped fresh parsley
– 1/2 cup breadcrumbs
– 2 eggs, beaten
– Salt and pepper to taste
– Mozzarella cheese, cut into small cubes
– Vegetable oil for frying

1. In a large bowl, mix together the cooked rice, Parmesan cheese, parsley, breadcrumbs, eggs, salt, and pepper.
2. Take a small amount of the rice mixture and flatten it in the palm of your hand.
3. Place a cube of mozzarella cheese in the center of the rice mixture and shape it into a ball.
4. Repeat with the remaining rice mixture and cheese cubes.
5. Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 350°F.
6. Carefully drop the arancini balls into the hot oil and fry until golden brown, about 3-4 minutes.
7. Remove the arancini from the oil and drain on paper towels.
8. Serve hot and enjoy!
Spinach and Ricotta Arancini Recipe
Ingredients:
– 2 cups cooked Arborio rice
– 1/2 cup ricotta cheese
– 1/4 cup chopped spinach
– 1/4 cup grated Parmesan cheese
– 1/2 cup breadcrumbs
– 2 eggs, beaten
– Salt and pepper to taste
– Mozzarella cheese, cut into small cubes
– Vegetable oil for frying
Steps:
1. In a large bowl, mix together the cooked rice, ricotta cheese, spinach, Parmesan cheese, breadcrumbs, eggs, salt, and pepper.
2. Follow steps 2-4 from the Classic Arancini Recipe.
3. Heat the vegetable oil and fry the arancini balls as directed in steps 5-7.
