Classic French Crepes

Ingredients:

1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
2 tablespoons melted butter
Pinch of salt

Steps:

In a mixing bowl, whisk together flour and eggs.
Gradually add in milk and water, stirring to combine.
Stir in melted butter and salt, mixing until smooth.
Heat a non-stick skillet over medium heat and pour a small amount of batter into the center, swirling to coat the bottom of the pan.
Cook for about 2 minutes, then flip and cook for an additional minute.
Repeat with remaining batter, stacking crepes on a plate as you go.
Serve warm with your favorite toppings such as Nutella, fresh berries, or powdered sugar.

Spinach and Feta Stuffed Crepes

Ingredients:

Classic French crepes (see recipe above)
1 cup cooked spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup diced red bell pepper
2 tablespoons chopped fresh parsley

Steps:

In a mixing bowl, combine spinach, feta, bell pepper, and parsley.
Spoon filling onto the center of each crepe and fold over the sides to enclose.
Heat a skillet over medium heat and cook filled crepes for 2-3 minutes on each side until golden brown.
Serve hot with a dollop of Greek yogurt on top.

Chocolate Banana Crepes

Ingredients:

Classic French crepes (see recipe above)
1 banana, sliced
2 tablespoons chocolate hazelnut spread
2 tablespoons chopped hazelnuts
1 tablespoon powdered sugar

Steps:

Spread chocolate hazelnut spread onto each crepe.
Place banana slices on one half of the crepe and fold over.
Heat a skillet over medium heat and cook filled crepes for 1-2 minutes on each side.
Sprinkle with chopped hazelnuts and powdered sugar before serving.
