Classic Arancini Balls

Ingredients:
– 2 cups leftover cooked rice
– 1/2 cup grated Parmesan cheese
– 1/4 cup chopped parsley
– 1/2 cup breadcrumbs
– 2 eggs
– Salt and pepper to taste
– Mozzarella cheese, cubed
– Marinara sauce for serving

Steps:
1. In a large bowl, combine the leftover rice, Parmesan cheese, parsley, breadcrumbs, eggs, salt, and pepper. Mix until well-combined.
2. Take a small amount of the rice mixture and flatten it in your hand. Place a cube of mozzarella cheese in the middle and form it into a ball.
3. Repeat with the remaining rice mixture and mozzarella cheese.
4. Heat oil in a deep fryer or skillet over medium heat. Fry the arancini balls until golden brown and crispy.
