Classic Vegetable Spring Rolls
Ingredients:
– 1 package of spring roll wrappers
– 2 cups of shredded cabbage
– 1 carrot, julienned
– 1 bell pepper, thinly sliced
– 1/2 cup of bean sprouts
– 1/4 cup of chopped cilantro
– 1/4 cup of chopped mint
– 1/4 cup of chopped basil
– 2 tablespoons of soy sauce
– 1 tablespoon of rice vinegar
– 1 tablespoon of sesame oil
– Salt and pepper to taste
– Oil for frying
Steps:
1. In a large bowl, combine the cabbage, carrot, bell pepper, bean sprouts, cilantro, mint, and basil.
2. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, salt, and pepper. Pour this dressing over the vegetable mixture and toss to combine.
3. Place a spring roll wrapper on a flat surface. Scoop about 2 tablespoons of the vegetable mixture onto the wrapper.
4. Fold the sides of the wrapper over the filling, then roll it up tightly.
5. Heat oil in a pan over medium heat. Fry the spring rolls until golden brown and crispy, about 3-4 minutes per side.
6. Serve hot with a dipping sauce of your choice.

– 1/2 cup of chopped cabbage
– 1/4 cup of diced red onion
– 1/4 cup of diced jalapenos
– 1/4 cup of chopped cilantro
– 1/4 cup of chopped scallions
– 2 tablespoons of soy sauce
– 1 tablespoon of sriracha
– 1 tablespoon of lime juice
– Salt and pepper to taste
– Oil for frying
Steps:
