Classic French Onion Soup

Ingredients:

– 4 large yellow onions, thinly sliced
– 4 tbsp butter
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 1 tsp sugar
– 1/2 cup dry white wine
– 6 cups beef broth
– 1 bay leaf
– Salt and pepper to taste
– Baguette slices
– Gruyere cheese, grated

1. In a large pot, melt the butter and olive oil over medium heat. Add the onions and cook until caramelized, about 30 minutes.
2. Stir in the garlic and sugar, and cook for another 2 minutes.
3. Deglaze the pot with white wine, scraping up any browned bits from the bottom.
4. Add the beef broth, bay leaf, salt, and pepper. Simmer for 30 minutes.
5. Preheat the oven broiler. Ladle the soup into oven-safe bowls, top with a baguette slice, and sprinkle with Gruyere cheese.

– 1/2 cup red wine
– 6 cups vegetable broth
– 1 bay leaf

– Rye bread slices
– Swiss cheese, grated

Instructions:

1. Follow the same instructions as the classic French Onion Soup, but substitute red onions for yellow onions and vegetable broth for beef broth.
