Classic Roasted Asparagus
Ingredients:
1 bunch of asparagus, washed and trimmed
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat oven to 400°F.
Place asparagus on a baking sheet and drizzle with olive oil.
Sprinkle with salt and pepper.
Roast in the oven for 15-20 minutes, or until asparagus is tender and slightly crispy.
Asparagus and Prosciutto Bundles
Ingredients:
1 bunch of asparagus, washed and trimmed
6 slices of prosciutto
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
Instructions:
Preheat oven to 400°F.
Wrap each asparagus spear with a slice of prosciutto.
Place bundles on a baking sheet and drizzle with olive oil.
Sprinkle with Parmesan cheese.
Roast in the oven for 15-20 minutes, or until asparagus is tender and prosciutto is crispy.
Asparagus and Mushroom Risotto
Ingredients:
1 cup Arborio rice
1 bunch of asparagus, washed and trimmed
1 cup mushrooms, sliced
4 cups vegetable broth
1/2 cup white wine
1/4 cup grated Parmesan cheese
Instructions:
In a large pot, sauté mushrooms until browned. Add Arborio rice and cook for 2 minutes.
Add white wine and simmer until absorbed.
Slowly add vegetable broth, 1/2 cup at a time, stirring constantly until rice is cooked through.
Stir in asparagus and Parmesan cheese until asparagus is tender.
Serve hot and enjoy!
