Classic Chicken Cashew Stir Fry
Ingredients:
1 lb chicken breast, sliced into thin strips
1 cup cashews
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
3 cloves of garlic, minced
1/4 cup soy sauce
2 tbsp hoisin sauce
1 tbsp sesame oil
1 tsp ginger, grated
Salt and pepper to taste
Instructions:
Heat the sesame oil in a large skillet over medium-high heat.
Add the chicken strips and cook until browned on all sides, about 5 minutes.
Add the garlic and ginger, and cook for another minute.
Add the bell peppers, onion, cashews, soy sauce, and hoisin sauce. Stir well to combine.
Cook for an additional 5-7 minutes, until the vegetables are tender and the chicken is cooked through.
Season with salt and pepper to taste.
Serve hot over steamed rice or noodles.
Spicy Cashew Chicken Lettuce Wraps
Ingredients:
1 lb ground chicken
1 cup cashews
1 red bell pepper, diced
1/2 cup green onions, sliced
2 cloves of garlic, minced
1/4 cup soy sauce
2 tbsp sriracha sauce
1 tbsp honey
1 tsp sesame oil
Salt and pepper to taste
Lettuce leaves for wrapping
Instructions:
Heat the sesame oil in a large skillet over medium heat.
Add the ground chicken and cook until browned, breaking it up with a spoon.
Add the garlic, bell pepper, and green onions. Cook for another 2-3 minutes.
In a small bowl, mix together the soy sauce, sriracha sauce, and honey.
Pour the sauce over the chicken mixture and stir to combine.
Simmer for 5-7 minutes until the sauce has thickened.
Stir in the cashews and season with salt and pepper.
Serve the spicy cashew chicken in lettuce wraps for a light and flavorful meal.
